Mark and Michael Apple
For over 18 years, twins Mark and Michael Apple have been creating and cooking our deli/catering success. Both brothers started in the restaurant business at age 13 as busboys, dishwashers and ultimately cooks at Iannis Italian Restaurant in lower Greenville in Dallas, Texas. Their love of the business coupled with their solid work ethic propelled them into very successful careers in some of the largest and most famous hotels, country clubs and restaurants in the U.S. These accomplishments solidified their credentials as two of the best chefs in the Florida Panhandle.
Mark is our hot kitchen specialist and executive chef. His resume starts and travels around Texas including three years training at the Chateaubriand in Dallas. From there, Mark took over as executive chef at Dovie's Restaruant also in Dallas. After Dovie's, he would join Club Corp International with head chef responsibilities in Victoria. Mark was later promoted to Executive Chef at Kingwood Country Club in Houston, the largest country club in the world at that time. Most recently, Mark was chosen as chef by Club Corp to open the University Center Club in FSU stadium. He received many prestigious awards throughout his career not the least of which is being voted Best Local Deli and Caterer here at the Apple Market. Many of Mark's signature dishes are wedding and banquet favorites (such as the White Wine Chicken). We believe these dishes to be unmatched for quality, flavor and value.
Michael's career also started in restaurants in Dallas which created opportunities throughout other areas in Texas. At 21 years old, he left Dallas for a Sous Chef position at the Bossier City Hilton, From there he spent time as Executive Chef at the Houston Warwick meeting his mentor, Bruno Werhen. Michael followed Bruno to the Drake Swiss Hotel in Manhattan where he then became an Assistant Executive Chef for two years. Prior to joining us here at the Apple Market, Michael held chef positions for Disney in Orlando and most recently at the Omni Rosen. He has decades of experience planning and preparing for parties of thousands as well as specialized knowledge of salads, desserts and hors d'oeruves. His platteres are true works of art and will adorn your table with beauty and exceptional quality. Michael was the founder of our Apple Market Deli that began with one man 19 years ago. Our famous Chicken Salad was actually his original creation.

Kristen is a Pensacola native and has been with the Apple Market for over a decade. She is beyond perfect to be married into the Apple family as she naturally gives off the kind heartedness and caring spirit that the entire family radiates. She thoroughly enjoys her time with her husband and cooking healthy for her beautiful children; but she does have an insane sweet tooth. (Don’t leave your chocolate covered almonds around her). She started the Catering department in 2009 and through trial, error and faith lead to much success. She developed the busiest and most talked about aspect of this store. Being that our catering is marketed predominantly through word of mouth, Kristen does everything to ensure that a smile stays on your face before, during and after your event.
You’ll be comforted by Elizabeth’s Georgian southern belle accent the moment she introduces herself. She’s been working at the Apple Market since 2008 and has been a Coordinator since 2011. As a new mother of a beautiful daughter, she embodies the position as coordinator and motherhood with sophistication and attention to detail. [Side Note]: It’s fun to be in the office with her especially when she likes to pull pranks every once and a while. She likes to stand behind the doors and jump out when we are not paying attention and one time at home, she put shaving cream in her husband’s shoes when he was getting ready for work. He was not pleased but how can you not laugh! Elizabeth knows how to keep the environment light and stress free which transfers over to her assistance with your event.
Melissa started working at the Apple Market in 2007 to put herself through a UWF education. Once she graduated in 2010, she moved to Colorado a few months later with her now husband. After 3 epic years in the Rocky Mountains, she was welcomed back to her Pensacola home in 2014 to come on board to the Catering department. [Fun Fact]: When Melissa was in elementary school, she got lost on her bike in the East Pensacola Heights neighborhood when a then unfamiliar woman to her named April Shirley helped her back home. (April happens to be our loyal and wonderful manager of now 30 years). As Melissa is a world traveler and even marrying in Ireland, she enjoys getting lost and encourages destination weddings. If you’re having a destination wedding yourself, she can make this seeming stressful hike feel like a cake walk.
